A chef has swapped a life on yachts for her own pop-up kitchen in west Dorset.

Robin Wylde will be operating out of The Pop Up Kitchen in Lyme Regis’ Broad Street three days a week, offering the best in local produce but keeping the dishes simple and seasonal.

The kitchen is the idea of Harriet Mansell and, with her best friend Patsy, will be taking advantage of the abundance of wild foods that grow along the coastline, hedgerows and fields to produce a regularly changing menu.

Harriet is no stranger to fine dining and has worked in Michelin starred restaurants, but she has been trying to set up a pop-up kitchen, adding to her impressive culinary experience.

She said: “I worked in kitchens for a few years in London and Denmark and then after that I worked on yachts for a while, so for the past two years I have been on yachts.

“I spent the last year working on a sailing yacht for the Murdoch family (prominent media proprietors).

“I joined the boat in Antigua, and they treated us really nicely.”

After her last job finished in September, she had some time off and travelled to Sir Lanka, Australia and Bali, which is where she realised she wanted to come back to her roots and start this venture.

Harriet added: “All of a sudden it hit me, I thought ‘I am going back, I need to go home’ and I started looking for an opportunity to do this kitchen and this is how it came about.

“I feel really happy because I set up a kitchen before in Bristol, but it was obviously working for someone else. If I hadn’t have done the Bristol job, I wouldn’t have felt so equipped this time.”

The pop-up kitchen will feature a weekly-changing, seasonally led set menu of five to six courses, made up of locally sourced and foraged food, an ethos highlighted in the name Robin Wylde.

Harriet said: “It [the name] is a complete pseudonym, completely random.

“I use a lot of wild ingredients in my food, and one day me and my friends, talking in a Devon accent, said it’s like robbin’ the wild. We joked but then thought Robin Wylde sounds quite nice.”

As well as food, Harriet has compiled an exclusive list of natural, organic wines, beers and ciders as pairing good food and wine is something she is passionate about. There is also an optional wine pairing to have alongside the set menu.

Robin Wylde is currently open on Tuesday, Wednesday and Thursday evenings from May to October, adding daytimes in a month or so.
